Double Ka Meeta (Bread pudding)

** Diwali Special**Kid's Favorite**Easy Recipe**

Ingredients: 


  • Bread slices- 1.5 loaves
  • Sweetened condensed milk- 0.5 cup
  • Milk- 1 cup
  • Cardamom/ Elaichi/ Ellaka- 6 nos. (skinned and crushed)
  • Cashews- A handful
  • Pistachios- A handful
  • Sliced almonds- A handful
  • Rosewater- 1 tsp.
  • Cinnamon/ Karukapatta powder- A pinch
  • Nutmeg/ Jathikka powder- A pinch
  • Ghee- As needed
  • Salt- A pinch
Cooking Time: 10 minutes

Makes: A dozen servings

Recipe:

Step 1: Cut the sides of the bread and cut into small/ medium size pieces of any shape.
* If you want a mushy consistency make the pieces more smaller, otherwise make them medium sized.


Step 2: Heat ghee in a pan to toast the slices of bread. Toast well on both sides, spread more ghee as needed.





Step 3: In the same pan, heat some more ghee add the chopped/ crushed cashews and pistachios and the sliced almonds and toast them. Remove from the flame once they are lightly toasted.


Step 4: In a deeper pan, mix the milk, condensed milk ,cardamom powder, nutmeg powder, cinnamon powder and a pinch of salt. Start warming the milk, it does not need to boil, just warmed. 


Step 5: To this warmed mix, add the saffron stands and mix well till dissolved.


Step 6: Into this add the toasted bread, layer the nuts on top of that and spread 1 teaspoon of rose water evenly on top and heat on low flame till the bread slices absorb all the moisture. Occasionally stir lightly to prevent milk from burning at the base. 

**I usually do this layering step in a bigger pan to make mixing easier. 

Once all moisture is absorbed, remove from flame and garnish with toasted almonds or pistachios. Enjoy warm or chilled!!
