Malabari Athishaya Pathiri/ Adukku Pathiri/ Chatti Pathal (Spicy Savory Layered Chicken Pancake)

** 15 Minute Quick and Easy Family Favorite*

Ingredients: 
  • Chicken Breast (boneless, skinless)- 1 no.
  • Onion (diced)- 1
  • Green chilli (chopped)- 1/2 of 1
  • Garlic (crushed)- 3
  • Ginger (crushed)- 1 medium
  • Turmeric- 1/4 tsp.
  • Coriander powder -1/4 tbsp.
  • Pepper- 1/2 tsp.
  • Fennel powder/ Perinjeerakam podi- 1 tsp.
  • Lime juice- 1/2 of 1
  • Salt- 1/4 tsp.
  • Oil- 1 tbsp.
  • Coriander leaves/ Malli ella (torn)- 1 sprig
  • Eggs- 2
  • Flour/ Maida- 1 cup

Cooking Time: 15- 20 minutes

Serves: 2-3 adults

Recipe:

Step 1: Wash and chop the chicken and the onion, ginger, garlic, chilli, coriander leaves. 



Step 2: Cover and cook the chicken with 2 tbsp. of water, a pinch of turmeric, lime juice and salt. Remove after cooked through and shred well. (I used a blender.)







Step 3: Mix the flour with salt and 1.5 cup water to make a runny smooth batter. Add more water if needed.



Step 4: Pour a ladle full of batter onto a heated skillet/ seasoned pan to form thin pancakes. Flip both sides (usually takes few seconds per side)
* TIP: I used a non stick pan to avoid using oil.




Step 5: To make the filling, in a pan, add oil and cook the onion, ginger, garlic, green chilli till the the onion is browned.

*TIP:  Adding salt will make the onions saute/ brown faster. 



Step 6: Add the spice blend and roast. Then add the shredded chicken and mix well. Cover and cook till the flavors blend together (few minutes). Add the coriander leaves. Remove from the flame.







Step 7: In a separate bowl, whisk/ beat two eggs. Now you are ready to assemble.



Step 8: In a pan, heat some ghee/ oil (1 tsp.), Reduce the flame to low and place the first pathiri/ pancake. Coat it with the egg mixture. Next add the meat mixture.





Layer the next pancake on this and repeat the egg mixture, meat mixture till all the pancakes are used up.





Step 9: Pour the remaining egg mixture and coat it well. Cover and place the pan onto a heated tava/ griddle. (Direct flame will cause the bottom to burn). Cook covered for 1 minute.



Step 10: Place a larger pan on this pan and flip the layered pathiri onto the larger pan. Cook for another minute on the Tava/ griddle. Slice and Serve!!

(* Tip: if you use ghee/ oil in the first pan, it will slide onto the next pan almost immediately.
