Sweet Diamond Cuts/ Shakarpara (Low Sugar)

* Tea time snack * Childhood favorite * Reduced Gluten *

Ingredients: 
  • Flour/ Maida- 2 cups
  • Salt- 1/4 tsp.
  • Water- As needed
  • Sugar (Optional)- 1/4 cup
  • Oil- As needed
Cooking Time: 15 minutes

Makes: 4 dozen approximately

Recipe:
Step 1: Mix the flour and salt well and knead well with hot water (Hot water helps breaks down the gluten). Add a few drops of oil on the dough. Keep covered till ready to use since it will dry out fast.




Step 2: Roll out to thin sheets using a few drops of oil while rolling (Oil prevents the sheet from shrinking while rolling due to elastic properties of flour). Cut into desired shape. For diamond shape, cut the sheets in opposite diagonals.



Step 3: Heat oil and test oil temperature with a small piece (it should immediately come to the surface). Cook all the pieces and remove from the oil once both sides are golden brown.

Bake the pieces at 350 F (180 C) for 20 minutes. 
It will not swell up like when fried, but will still be crunchy, delicious and definitely more healthy.


Step 4: In a separate pan, heat the sugar with 2 tbsps. of water till a drop pressed between your fingers forms a thin strand of sugar ( Optional step to add the sugar syrup). Add to the prepared diamond cuts, close with a plate and shake well to spread evenly on all the pieces.







BONUS TIP:  Make extra and store in airtight containers for a quick tea time snack or lunchbox snack. Stores well for a month.
