**The Star of my homemade freezer PBandJs**
* Ingredients:- Strawberry - 1 dozen (diced)
- Sugar/ Honey - 3 tbsp.** (Optional- Avoid if you are gluten free)
- Lime juice- 1 tbsp.
- Salt- A pinch
- Vanilla Essense- Few drops (Optional)
* Recipe:
Step 1: In a heavy bottom saucepan, add the diced strawberries sugar, vanilla essense, salt and lemon juice.
Step 2: - Break any clumps formed with a spatula till it becomes jam like consistency. Check taste and add more sugar as needed. Ripe fruits will be naturally sweet.
* Do not add water, the fruits will release a lot of water when it is heated.
* TIP:
- Cool completely and move to a jam jar/ mason jar. Will refrigerate for upto 2 months. This recipe will also freeze well.
- I usually jam any fruit that is nearing ripening since this is such an easy recipe.
- If you are gluten free, you can skip adding sugar or any sweetner. Sugar improves the shelf life, so make sure to make in smaller batches and use immediately or within 3 days. Pick fruits that are super ripe to get the sweetest jam in that case.
