Ammachy's Recipe: Beans Thoran (Green beans Stirfry)


** Easy Healthy recipe** High fiber** Vegan **

Ingredients: 
  • Onion (diced)- 1/2 of 1
  • Green beans (thinly sliced)- 2 lbs (or 1 kg)
  • Green chilli (sliced)- 2 or as per taste
  • Ginger (minced)- 1 Medium piece
  • Coconut (shredded)- 1.5 cups
  • Cumin/ Jeera powder- 1 tsp.
  • Turmeric powder/ Malli podi- 1/2 tsp.
  •  Mustard/ Kadukke- 1/4 tsp.
  • Curry Leaves- 2 sprigs
  • Salt- 1.25 tsp (or as per taste)
  • Oil- 2 tbsp.
Cooking Time: 20 minutes

Recipe:
Step 1: Chop all the vegetables finely as shown below
(here the onion was mixed with the minced ginger and slit green chilli and the sliced beans are mixed with shredded coconut, cumin powder, turmeric powder and salt)


Step 2: In a pot, heat some oil and sputter mustard seeds, followed by the onion, ginger, green chillis and curry leaves.





Step 3: Once the onions are lightly sauted, add the green beans, shredded coconut, cumin, salt and turmeric mixture.
Add 1.75 cup of water and cook with the lid on for about 20 minutes/ till the beans are cooked. Check for salt and add per taste.
Occasionally mix the contents to prevent the bottom getting burnt.










BONUS TIP:  This recipe freezes really well and is a Gluten Free recipe that tastes great with rice or chappathi.
