** Gluten Free Healthy Quick Meal * Family Favorite
* Ingredients:Sweet potato:
Red Chilli Dipping sauce/ Molaku charu:
- Onion (finely minced)- 1 tbsp (less than 1/4 of 1 onion)
- Coconut oil/ Velichenna- 1 tsp
- Red chilli powder- 1 tbsp.
- Salt- 1/4 tsp/ As per taste
* Cooking Time: 10-15 minutes (boiling sweet potatoes), 1 minute for dipping sauce
* Recipe:
Step 1: Wash and chop the sweet potato into big chunks
Step 2: Boil in a pot, covering them with water and add salt. Cover with a lid for faster cooking.
Step 3: Once cooked through, immediately remove from the water and strain to prevent it from getting soggy.
Step 4: Add all the ingredients fro the dipping sauce into a small bowl and mix well to combine.
(Ingredients: Minced onion, red chilli powder and salt (as per your taste), coconut oil)
* TIP: Adding more onion will make it sweeter.
* BONUS TIP: The water used for boiling is full of nutrients and can be used as a base for making a vegetable stock.
The skin of a sweet potato is nutrient- dense, packs a lot of fiber and is also edible.
