Ammachy's Recipes: Nutritious Boiled Sweet Potato- with Mollaku charu/ Red chilli dipping sauce

** Gluten Free Healthy Quick Meal * Family Favorite

Ingredients: 

Sweet potato:
  • Sweet potato (large chunks)- 3 nos.
  • Water- to cover
  • Salt- As per taste/ 1/4 tsp.
Red Chilli Dipping sauce/ Molaku charu:

  • Onion (finely minced)- 1 tbsp (less than 1/4 of 1 onion)
  • Coconut oil/ Velichenna- 1 tsp
  • Red chilli powder- 1 tbsp.
  • Salt- 1/4 tsp/ As per taste

Cooking Time: 10-15 minutes (boiling sweet potatoes), 1 minute for dipping sauce

Recipe:
Step 1: Wash and chop the sweet potato into big chunks

Step 2: Boil in a pot, covering them with water and add salt. Cover with a lid for faster cooking.





Step 3: Once cooked through, immediately remove from the water and strain to prevent it from getting soggy.


Step 4: Add all the ingredients fro the dipping sauce into a small bowl and mix well to combine.
 (Ingredients: Minced onion, red chilli powder and salt (as per your taste), coconut oil)

* TIP: Adding more onion will make it sweeter.





BONUS TIP:  The water used for boiling is full of nutrients and can be used as a base for making a vegetable stock.
The skin of a sweet potato is nutrient- dense, packs a lot of fiber and is also edible.
