** Family Favorite **One Pan Recipe** Freezer Make Ahead Lunch/ Dinner**
* Ingredients:- Boneless Chicken/ Beef/ Mushrooms- 1 cup/ As needed
- Onion- 1
- Bell Peppers- 1 Cup/ As needed
- Tomato- 1
- Lemon- 1/2 of 1
- Any Flatbread/ Chappathi/ Tortilla- As needed
- Turmeric- 1/4 tsp.
- Coriander (Malli) powder- 1 tbsp.
- Chilli powder/ Paprika- 1 tbsp.
- Fennel (Ajwain/ Perinjeerakam) powder- 2 tsp.
- Garlic powder- 2 tsps.
- Garam Masala- 1/4 tsp.
- Pepper- As needed/ 1/4 tsp.
- Salt- As needed/ 1/4 tsp.
- Oil- As needed/ 1 tbsp.
** Optional Goodies:
- Flaxseed powder- 2 tbsps.
- Jalapenos- Sliced- As per taste.
* Cooking Time: 10-15 Minutes prep time and 25 minutes cooking time (Baking/ Stovetop)
* Makes: A dozen fajitas
* Recipe:
Step 1: Cut the Vegetables and meat into strips for faster and even cooking.
* I had already marinated my beef overnight and cut it into thin strips (Optional step, but overnight marination helps the meat to soak up the spices).
* TIP: I had cut my bell peppers beforehand as a part of my weekly meal prep and frozen it for faster cooking and less cleanup. If I had used fresh bell peppers, I would have sliced them into strips too.
Toasting/ Dry Roasting the Spice Rub before adding always imparts more flavour to any dish, but its an optional step.
Mix all the ingredients with the spice rub and squeeze in half a lemon and mix with oil and spread into a thin layer on a sheet tray and bake at 400F (200C) for 25 minutes/ until the meat is cooked through.
* This can be cooked on the stove top instead of in the Oven based on preference.
* Also if you are using mushrooms instead of meat, bake at 350F (180C) for 20 minutes.
Step 2: Spoon out a small quantity of the meat mixture onto the flatbread.
I used sweet potato chapattis as my base. The mild sweetness of the bread with the spiciness of the meat mixture make it yummy!!
Roll into fajitas and Enjoy!!

* BONUS TIP: This can be a great freezer meal and can be made in bulk in advance for make ahead lunchbox. Just wrap each one in aluminium foil/ clingwrap. Good for months if freezed properly.
** For reheating, just remove the fajita roll from the foil and place on a plate and microwave for 1 minute.
