Easy 2 minute Vegetable salad (A Tasty Side dish with Biriyani!!)

**Enjoy this flavorful, easy recipe! It's a family favorite* Gluten Free And Freezer Safe!!

* Ingredients:
  • Yogurt- 2 cups
  • Water- 1/4 cup
  • Cucumber (grated and diced)- 1 no.
  • Carrot (grated and diced)- 1 no.


  • Tomato (diced)- 1 no.
  • Green chilli (slit)- 1 (or half as per taste)
  • Cilantro/ Coriander leaves/ Malliella (finely chopped)- 2 nos.
  • Onion (sliced)- 1/2 of one
  • Pepper- As needed  (or 1/2 tsp.)
  • Salt- As needed ((or 1/2 tsp.)
Optional goodies:
  • Mayonnaise- 2 tsp.
* Serves: 4 people

* Cooking time: 2- 3 minutes

* Recipe:

- Wash and chop all the vegetables.
- Mix the yogurt well with the water to clear any lumps.
- Add Mayonnaise (for extra creaminess- Optional step*)
- Add all the chopped vegetables into the yogurt mixture and mix well.
- Taste and add salt and pepper as per taste (or as)
- Garnish with some coriander or mint leaves.

Step 1: Chop the Vegetables as below



Step 2: Mix the yogurt well with water to dilute and break all lumps


Step 3: Mix in all the chopped vegetables and add salt and pepper as needed.
Add Mayonnaise at this step (Optional*)
Garnish with some coriander leaves (Optional*)

Personal Tip: 

This recipe freezes really well. To defrost, just thaw overnight in the refrigerator or under running water or in a bowl of warm water for about 15-20 minutes.
