* Ingredients:- Boneless Chicken breasts- 2 nos.
- Yogurt- 1/2 cup
- Lemon- 1 no.
- Ginger paste- from 1 medium piece
- Garlic paste- from 4 nos.
- Cumin/ Jeerakam- 1.5 tsp.
- Garam masala- 1.5 tsp.
- Red chilli powder- 1/2 tsp./ per taste
- Pepper powder- 1/2 tsp.
- Turmeric- 1 tsp.
- Coriander powder- 1 tsp.
- Paprika- 1/2 tsp. (optional- gives a beautiful red color)
- Tomato (blended)- 1 no./ one 8 oz. can
- Onion (diced)- 1 no.
- Oil- As needed/ 1 tbsp.
- Fenugreek powder/ uluva podi- 1 pinch (optional- at the end)
- Salt- Per taste
* Makes: 6 servings
* Recipe:
Step 1: Marinate the cleaned and chopped chicken with the yogurt, salt, half of the spice blend, and half of the ginger garlic paste and the juice of one lemon. Let it marinade for 1 hour r ideally overnight for maximum flavor.
Step 2: Fry the marinated chicken pieces and remove and strain the excess oil on a tissue.
Step 3: In a pan, add a tbsp. of oil and saute the onions and the remainder of the ginger- garlic paste. It does not need to get browned for too long, just the onions have to turn translucent. Then add the remainder of the spice blend. Cook till the mixture smells aromatic.
Step 4: Add the blended tomato and 1/4 cup of water. Cover and cook and let it come to a rolling boil. At this stage, check the salt and add per taste.
Step 5: Add the cooked chicken pieces and cover and cook on medium low for 5 minutes
Finally lower the flame and add 2 tbsps. of heavy cream and a pinch of fenugreek powder(optional). Cook for just 5 more minutes and remove from the flame.
Do not add more of the fenugreek powder, since your dish will turn bitter.
* BONUS TIP: This recipe freezes well and can be made way ahead of time for a party and just thaw overnight and reheat in the oven at 350 F (180 C) for 30 minutes or in the microwave to desired temperature prior to serving.
