Chettinad Kuzhi Paniyaram

** Gluten Free** Easy and Savory Breakfast **

Ingredients: 
  • Fermented idli/ dosa batter- 2 cups
  • Urad dal/ Uzhunnu- 1 tbsp.
  • Curry leaves- 1 sprig
  • Ginger (crushed)- 1 small peice
  • Mustard seeds/ Kaduku- 1/4 tsp.
  • Dry red chillies- 1 no.
  • Pepper- 1/4 tsp.
  • Salt- As needed

Cooking Time: 15 minutes

Makes: A dozen kuzhi paniyarams.

Recipe:

Step 1: Temper the mustard seeds followed by the curry leaves, ginger and dry red chilli (torn into small pieces) and urad dal. Once lightly brown and fragrant, remove from heat.





Step 2: Add this mixture to the fermented idli/dosa batter and mix well. Add very little water if batter is really thick. Check and add salt as per taste.
The batter consistency should be semi thick like idli batter.




* TIP: Rub some oil inside of the measuring cup/ spoon to ensure the batter does not stick and flows easily while pouring.

Step 3: Heat an aebleskiver/ unniappam pan, and add some oil to each of the moulds. Once heated, pour in the prepared batter into the mould  2/3rd full. Cover and cook till it is firm on one side (10 minutes).

Step 4: Flip using a toothpick/ skewer. Cook the other side for a few minutes. Serve warm.





BONUS TIP:  This tastes great in place of vada in sambhar vada or in place of idli in idli manchurian.
