Easy Homemade Jalebi

* Tea time snack *Holi Special *

Ingredients: 
  • Urad dal (Uzhunnu)- 1 cup
  • Sugar - 1 cup
  • Water- 1/4 cup
  • Rose water-1 tsp.
  • Food color (orange/ red+yellow)- 1 drop (Optional)
  • Milk- 1 tsp. (Optional)
Cooking Time: 15 minutes

Makes: 12- 15 Jalebis

Recipe:
Step 1: Soak the urad dal for at least 1/2 an hour.
In a pan, heat the sugar with water till you get a thick syrup/ chasni.
(Tip: You can add a tsp of milk to remove the impurities from the sugar syrup. It will rise to the top and you can skim it off the syrup with a ladle.)




Step 2: Keep stirring for a few minutes till a drop pressed between your fingers will form a thin strand of sugar, lower the flame and add the food color and rose water.
(* Tip: Keep the syrup on very low flame to prevent hardening.)



Step 3: Grind the soaked urad dal to a smooth paste with 1/4 cup water. It should be of medium poring cnsistency. Use this batter immediately or the batter will soak up the water and be hard to pour. (If that happens, add more water and mix as needed)



Step 4: You can use a muslin cloth or a squeeze bottle as shown with a small opening. Heat the oil and once well heated, lower the flame and make the jalebis (I used a circular flower pattern for piping)






Step 5: Flip and cook both sides. Then remove and place directly into the hot sugar syrup and press down to coat well. Remove onto a plate and serve warm
