Chakkakuru Upperi/ Mezhukkuperatti

** Jackfruit Seed Stir Fry ** Vegan and Gluten Free ** Freezer Safe **

Ingredients: 
  • Peeled and sliced Jackfruit seeds- 2 cups
  • Curry Leaves- 1 sprig
  • Sliced coconut/ Thenga kothu- 1/4 cup
  • Garlic- 3 cloves
  • Ginger- 1 Medium piece

** Spice Rub:

    • Turmeric- 1/4 tsp.
    • Red chilli powder- 1/2 tbsp./ Per Taste
    • Coriander powder- 1/2 tbsp.
    • Cumin/ Jeera powder- 1/4 tsp.
    • Pepper powder- 1/4 tsp.
    • Garam Masala- 1/2 tsp.
    • Salt- 1/4 tsp/ Per taste

Cooking Time: 10 minutes

Serves: 6-8 people

Recipe:

Step 1: Mix the spice rub on the  peeled and sliced jackfruit seeds.


** I used a store bought packet of peeled and semi cooked jackfruit seeds. If you are using the raw seeds to make this dish, you will have to boil/ pressure cook (about 10 minutes/ 1 whistle) the peeled seeds before slicing and adding the spice rub.




Step 2: In a pan, add some coconut oil and once the oil is hot, add the seeds mixed with the spice followed by the curry leaves and the sliced coconut.
Cook uncovered and do not add any water. Will usually take about 10 minutes




BONUS TIP: This can be easily made in bulk and used for later quick meals/ lunchbox as it freezes really well.
