* Ingredients:- Raw rice/ Pachari- 2 cups
- Urad dal/ Uzhunnu- 1/4 cup
- Onion (diced)- 1 no.
- Sliced coconut/ Thenga kothu- 1/2 cup
- Baking soda- 1/4 tsp.
- Garlic powder- 1/4 tsp
- Pepper- 1/4 tsp
- Curry leaves- 2 sprigs
- Fennel powder/ Perinjeeraka powder- 1/4 tsp.
- Salt- As needed
- Oil- As needed
* Makes: 2 loaves
* Recipe:
Step 1: Wash and soak the rice and urad dal for about 3 hours and grind to a smooth consistency using some of the soaked water (The batter must not be too watery or runny. Add some rice flour if you add more water during grinding by mistake to correct the consistency)
Step 2: Add the fennel seed powder, baking soda, salt, pepper to the batter.
Step 3: In a pan, add some oil and saute the sliced coconut. Remove from the pan once it is medium brown. Next saute the onions and remove once golden brown. Mix the coconut, onions and curry leaves well with the batter.
Step 4: In a pan, add some oil and pour and spread 1/2 of the batter into the pan (must not exceed 1/2 the height of the pan or it will not cook through). Cover and cook till it lifts of the pan easily.
Transfer it into a plate, cover with another plate, flip and return to the pan to cook the other side.

Pour the batter 1/2 way into a well oiled baking dish and bake at 350 F (180 C) for 30 minutes till a toothpick inserted inside comes out clean.
* TIP: Place a small glass container with water in the oven along with the appam while baking, it will prevent the top from drying out during cooking. Slice and serve once cooked with any curry/ side dish of your choice.
* BONUS TIP: This is an easy freezer meal that stores well for months. Just cool completely, slice and store in ziploc bags. To reheat, thaw overnight in fridge or in microwave for 1 minute per slice.
