1 Minute Microwave Egg Mug Muffins (Freezer Safe Recipe)

** My 1 year old's favorite breakfast **

* Ingredients:
  • Egg- 1
  • Milk - 1 tsp.**
  • Salt- A pinch
  • Pepper- A pinch 
  • Garlic powder (opt.)- A pinch
* Recipe:

- Wipe a microwave safe mug with some oil or butter or cooking spray. (Optional step- I usually skip this when I'm in a rush)
- Add the egg, milk, salt, pepper and garlic powder and whisk to combine.
- Microwave for 1 minute (or 45 seconds for higher power microwave)
- Pop them out with a spoon and enjoy.

* Note:

- Add a sausage in between the egg for an additional boost of protein, the sausage will cook for 45 secs while the egg is cooking.

- Add milled flax, chopped spinach or kale or cheese for extra yumminess.
- Easy to freeze. Just let it cool and add 2/3 nos. to a plastic sandwich bag. To thaw, just microwave each muffin for 1 minute.

 Step 1: Add 1 egg


Step 2: Add milk (If you add more milk like in thia pic below, the muffin will be fluffy)



Step 3: Add pepper



Step 4: Add salt



Step 5: Whisk to combine



Step 6: Microwave for 45 seconds to 1 minute



Enjoy!!




Break the muffin into smaller pieces with a fork to cool it faster and make a baby's scrambled egg!!  ☺❤๐Ÿ‘ถ




            Bonus tip: Freeze in smaller quantities!! Just microwave and serve!☺๐Ÿ‘
