Malabari Elanchi (Crepes with Sweet Coconut Filling)

** Family Favorite **Reduced Gluten** Malabar Favorite Snack/ Breakfast

Ingredients: 
  • Egg- 1 no.
  • Flour/ Maida- 1 cup
  • Water- 1 cup
  • Salt- A pinch
  • Turmeric- 1/4 tsp

* For Filling:
  • Ghee/ Butter/ Oil- 1 tsp
  • Coconut (Shredded)- 3/4 cup
  • Raisins- A handful
  • Cashews- A handful
  • Banana (sliced/ quartered)- 1 no.
  • Cardamom / Elaichi/ Ellakha (powdered)- 4 nos.
* Optional:
  • Cinammon/ Karukapatta powder- 1/4 tsp
  • Nutmeg/ Jathikka powder- A pinch
  • Jaggery (Sharkara powder)/ Sugar- 1/4 cup
  • Vanilla essense- A few drops
  • Flax seed powder- 1 tbsp.

Cooking Time: 15 minutes

Makes: 12 Elanchis

Recipe:

Step 1: In a pot, add the jaggery and 2 tbsp of water, let it caramelize/ brown (few seconds), and add in the shredded coconut and cardamom (elaichi) powder. Mix well and remove from the flame.




Step 2: In a pan, add some ghee/ oil and lightly roast the cashew nuts and raisins 
* TIP: The raisins just need a few seconds, whereas the cashews take a bit longer.




Step 3: Add some sliced/ quartered ripe banana to the pan and caramelize for a few seconds. Remove from the pan. (Optional Step)
* TIP:  The natural sugar of the banana will make it caramelize, no need to add sugar. 


Step 4: Beat an egg well and add in the dry ingredients gradually and mix well and add enough water to form a smooth thin runny consistency. (Dry ingredients: Flour, turmeric, salt, , cinnamon powder, nutmeg powder, vanilla essense, flax seed powder.)

Step 5: Lightly butter/ oil a frying pan and pour a spoonful of batter and spread it well using the back of a spoon to form a thin crepe. Cooks very fast 2 seconds per side. Flip and cook both sides. Remove from the pan.






Step 6: Into the cooked elanchi/ crepe, add a spoonful of the filling and lightly roll to form a roll.

To keep the filling from falling out while eating, roll it like a burrito, folding the edges in before rolling.
